Ingredients:
Organic Banana: 1/2 to 1
Organic Agave: a soupçon
Organic Hempseed: 1 tablespoon
Organic Grated Coconut: 1 tablespoon
Organic Coconut Milk: 1 tablespoon

Put the banana on a dessert plate. Pour a soupçon of agave on the banana; sprinkle hempseed and grated coconut. Add coconut milk.

Fruity Chia Seed Squares

These fruity chia seed squares are so nutritious that we can eat them as much for breakfast as for dessert or snack.

Ingredients:
Organic Dried Apricots: 1 1/2 cups, chopped
Organic Medjool Dates: 1/2 cup, pitted
Organic Hemp Seeds: 1/4 cup
Organic Black Chia Seeds: 1/4 cup
Organic Lemon Juice: 2 tablespoons
Organic Ground Nutmeg: 1/2 teaspoon
Organic Vanilla Extract: 1/2 teaspoon

Oil a 8″ x 8″ glass or ceramic pan. Pit dates. Chop apricots and dates. Mix all ingredients in a food processor until the mixture is smooth but chunky. Press evenly in the oiled pan. Chill for 1 to 2 hours and cut into 12 squares. Store in the refrigerator for up to two weeks.

Wild Rice Pilaf with Apricots and Shiitakes

The shiitake and portobello mushrooms enrich this tasty wild rice pilaf while the apricots tone and sweeten this zesty plate.

Ingredients:
Organic Extra-Virgin Olive Oil: 2 teaspoons
Organic Shiitake Mushrooms: 3/4 cup, chopped
Organic Portobello Mushroom: 1, chopped
Organic Onion: 1/2, chopped
Organic Wild Rice: 1/2 cup
Organic Long-Grain Brown Rice: 1/2 cup
Water: 2 cups
Organic Black Pepper: to taste, ground
Organic Dried Apricots: 1/2 cup, chopped
Organic Raw Walnuts: 1/2 cup
Organic Thyme: 1 1/2 tablespoons
Organic Fresh Parsley: 3 tablespoons, chopped
Organic Red Wine Vinegar: 1/2 teaspoon

Sauté the chopped onions, shiitake and portobello mushrooms in olive oil in a medium saucepan at medium heat for about 5 minutes.  Add the water, the ground black pepper, and the brown and wild rice. Increase the heat to high to bring to a boil.  Cover and reduce the heat to medium-low to keep it at near-boiling temperature for about 40 minutes.  If the liquid is not completely absorbed, uncover and increase the heat slightly for about 5 minutes.  Remove from heat, cover if uncovered, and let it cool down for 5-10 minutes.  Move to a large bowl.  Mix in the raw walnuts, chopped apricots, thyme, fresh parsley and red wine vinegar using a fork.

High Fiber and High Protein Cereal

This recipe is easy, high in fiber and protein and full of nutrients.

Ingredients:
Organic Sesame Seeds: 1 cup
Organic Pumpkin Seeds: 1 cup
Organic Chia Seeds: 1/4 cup
Organic Sunflower Seeds: 1 cup
Organic Oat Bran: 1 cup
Organic Almonds: 1 cup
Organic Walnuts: 1 cup
Organic Brazil Nuts: 1 cup
Organic Pecan Nuts: 1 cup
Organic Carob Powder: 3/4 cup
Organic Raw Mesquite Powder: 1/4 cup
Organic Raw Maca Powder: 2 tablespoons
Organic Bladderwrack Powder: 1 tablespoon
Organic Cinnamon (optional): 1 teaspoon

Grind all the seeds and nuts in a coffee grinder.  It is not necessary to grind into powder.  Even there are some pieces, that’s fine.  Add carob powder.  Well mix the nutty mixture.  Keep refrigerate.  Serve with the oats-hemp cream or sprinkle on a fruit salad.

Lucuma Ice Cream

Lucuma is a popular ice cream flavour in Europe and South America. It is an alternative wonderful sweetener that is chock-full of maple-like flavour. Its impressively low sugar content and naturally occurring vitamins and minerals make it the perfect compromise between the sweet tooth and the waistline.

Lucuma Ice CreamIngredients:
Organic Raw Lucuma Powder: 1 cup
Organic Raw Cashews: 2 cups
Organic Vanilla: 2 teaspoons
Organic Yacon Syrup: 1/4 cup
Water: 2 cups

Place all ingredients in the blender. Blend until smooth. An easy way is to make it as an ice cream on a stick.
Or chill mixture in the freezer for 1 hour or 2, then scoop into the ice cream maker. Or, leave the mixture in the freezer for 3 to 4 hours (or longer), removing from freezer to mix every hour or so. Return to freezer, and repeat, until desired consistency. Makes 2 cups

Will keep for many weeks in your freezer.

Coco-Oats

Ingredients per serving:
Water: 1 cup
Organic Rolled Oats Flakes: 1/4 cup
Organic Grated Coconut: 1 tablespoon
Organic Flaxseeds: 1 tablespoon
Organic Raisins: 1 tablespoon
Organic Goji berries: 1 tablespoon

In a small pan, mix all the ingredients. Cook for about 5 minutes on medium heat. Serve with cashew-hemp milk.

Cashew-Hemp Milk

This vegan milk is smooth, tasty and very nutritious.

Cashew-Hemp MilkIngredients:
Hot Water: 1 cup
Organic Cashews: 1/4 cup
Organic Hemp Seeds: 1 tablespoon
Organic Grated Coconut: 1 tablespoon
Organic Pitted Medjool Dates: 2
Organic Vanilla: 1 teaspoon

Mix all the ingredients together in the blender until smooth. If you want to have it more liquid, add 1/4 to 1/2 cup of coconut water. Ready to use. Refrigerate in a glass jar.
