In times past, when the salmon began to spawn, the Native people of the North Pacific Coast moved to camp at the mouths of salmon streams teeming with returning fish. As the fish was harvested it was cleaned and hung on racks to dry in the sun. Smokehouses were constructed on the beach in which the dried fish was then smoked to further cure it for the coming winter months. Today, smoked salmon remains one of nature’s greatest gifts from the sea.
